This is so easy and healthy you just might want to have some on hand in your fridge all summer. It lasts up to a week!
I used one bag of frozen shelled edamame (green soy beans)
Just follow cooking instructions on the bag it takes only 3 minutes in your microwave
In a food processor combine edamame
3-tablespoons thai green curry paste
1/2 cup chopped cilantro
1/2 cup salted roasted sunflower seeds
Process while pouring a light steam of extra virgin olive oil (about 1/2cup) until achieving a texture resembling a course pesto.
Serve on toasted sliced french bread
Finish with a drizzle of thai chili sauce
We served this with a SPARKLING ROSE.
I'm thinking next to serve with a CALIFORNIA ROSE.
